When I read more than what I had scheduled, it automatically fills in the bubbles for the future dates as if I read on those dates. Is it possible to not fill in those dates so I'm still encouraged to read on those dates and not take a break?

LeAnna Shields the current implementation treats the bubbles as scheduled readings, which correspond to the Edit Progress list. We may consider changing that in a future release but that is why they get filled in if you read ahead.

However, to encourage users NOT to take a break, we have updated the cards to still show a reading on reading days, even if you are ahead. Please test beta v4 and let us know if it is working as intended. Side note: we have removed the "pill" that tells you if you are ahead or behind. This is intentional because we are encouraging everyone to read/eat the LS like manna, and not just merely to keep a schedule.

DC: Great, thank you! Beta v4 works as you described above. The bubbles fill in as you read the scheduled portions, filling in dates in advance or past dates when reading to catch up if you fall behind. It makes sense now knowing the bubbles are tied to the reading schedule and not the actual dates, but this may be confusing for those who don't know this since the bubbles are displayed on the weekly calendar.
